sweetcorn & Halloumi Brunch recipie

Shopping & Ingredients List:

325g tin Sweetcorn, drained
1 Egg, beaten
2 tbsp Plain Flour
3 Spring Onions
60g Halloumi, diced
2 tbsp fresh Coriander, chopped
2 tbsp Olive Oil


1. Place half the sweetcorn, egg & flour into a food processor & blend until smooth.
2. In bowl mix in remaining sweetcorn, halloumi, spring onions & coriander to the processed batter.
3. In a large frying pan heat oil. Add two tbsp of mixture to make one fritter & fry in batches over a medium heat.
1-2 mins per side. Should make 3 fritters per person.
